As I’ve mentioned a few times, I find it so so hard to keep my weight down when I’m in NY. The food here is just way too yummy and I want to eat everything🙈
But, Sean and I are both trying to get our summer bodies on point so I’ve been cooking a lot lately and I thought I’d share three of my favourites that are super easy, super yummy and best of all, under 400 calories!

Last weekends Royal Wedding has well and truly kicked off wedding season! I’m sure most of your Instagram feeds and Facebook pages were filled with pictures of the beautiful bride in her classy Givenchy gown, but can we also take a second to appreciate the glamour and styles from some of the celeb guests!?😍
Summer has always been my favourite season, especially when it comes to the yummy foods! BBQs, ice creams and all of those fruity cocktails. I love to indulge, and one or two days of splurging isn’t a big deal, but if you enjoy all of your favourite treats all summer long, you end up undoing all of your progress that you made much quicker than you made it!
The past two summers I have worked so hard to get into shape ready to spend three months with Sean in NY. But by September, after all of the alcohol, BBQs and the eating out I’m left feeling very annoyed at myself for undoing all of my progress. This year I have promised myself I won’t let this happen! Helllooo! I’m actually writing this post whilst sat outside, tanning my legs as Spring has FINALLY arrived!
So, this past weekend I celebrated another holiday that I’d never even heard of before! Cinco De Mayo! A Mexican holiday which commemorates the Battle of Puebla where on May 5, 1862, the longshot Mexican army defeated a larger and better-equipped invading French army (I hope that’s right because I got it from Wikipedia👀). But I think for most Americans it’s just a great excuse to enjoy tequila, sangria, margaritas, tacos and nachos for a day and to dance around in sombrero hats (or in my case, a large blow up taco hat😂)!
Festival season is underway and this year I got to experience one of the biggest festivals of them all! COACHELLA!
This is one experience that has been on my bucket list since I first heard about it when I was about 15. I remember thinking when I was younger that it’s probably something I’d never get to attend as I had heard it was so damn expensive. Not only was I actually able to attend, I was lucky enough to do so on the same year that my all time favourite artist was headlining! Beyoncé getting pregnant last year and cancelling ‘chella 2017 was the biggest blessing for me, haha!
